La Caja China

Hi All,

I came across this box whilst surfing a couple of months ago and forgot all about it but joining this forum refreshed my memory. I was wondering if anyone has any experience of the chinese box or Caja China as it is known. Seems to be popular in Miami and looking at the following video I can see why, nice crackling!!!

Not sure what category of cooking it would come under but it seems to work.

They are fairly simple to cook on and last for years.


I was thinking about making one as there are no suppliers in the UK. If I ever get the time that is!!

I have three of the four models of La Caja China, and use them all the time. I've written two cookbooks specifically designed for the roasting boxes, and maintain a website with a Q&A, recipes, and lots of tips.
