It's been a while since I have posted on here so thought I'd get back into it by sharing the below, I have seen coffee rubs listed in various places and tried a number, the below was posted by Carolina Q on Green Eggers forum he used less salt due to low sodium diet I like a but more, also upped the Chilli powder slightly.
(Enough for 2-3 chickens)
2Tbs Instant Coffee (I use a good Kenco one)
2TBS light brown sugar
1 TBS Sea Salt (I use Kosher salt)
2 TBS Garlic Powder
5 Tsp Chilli Powder (I uses Ancho Chilli powder as its mild and a bit fruity)
1 TBS Black pepper.
Grind the coffee and salt down into a finer form and mix with remaining ingredients.
Apply some to the cavity of your chicken and then liberally apply over your whole chicken, cook in your chosen method I did mine vertically.
Turned out really well and went down really well with the family, I hadn’t used Ancho Chilli before and added a good dimension to the rub.
