Homemade sauces

Does anyone else have the same problem when making sauces?
Why is it hard to replicate shop bought bbq sauces, what do they do that we don't?.
I'm fine with making bbq sauces but they just don't taste like bought ones.

Any info greatly received lol

canrt help ya mate not made many, only bbq saunce i love is JD bbq sauce ,what dont u like about your home made one's ?
u wont get it spot on to shop bought but u can come close, its just finding the right amounts of ingredients to add.
tinker around u will find one that works for u

I Love mine, ive even had it on salad, but it does taste well nice day after making it try this one
2cups ketchup
1/4 cup cider vinegar
1/4 cup wos sauce i used Hendersons relish cos thats Sheffields Own make
1/4 cup Brown Sugar
3 table spoons blk treackle
2 table spoons arerican mustard cheap burger stuff
1 table spoon Hot chilli sauce
1/2 teaspoon Blk Pepper
Bring to Boil then lower to simmer to thin abit i added 1/2 cup pineapple juice then simmer for 20mins
thinking of addin 1 tablespoon soy sauce or a bit more Hendersons to next batch as i am still tinkering around with this one

it does have the america vingar base smell But tastes Fan tassss Tic even Better day After
infact this week end buying some big JAr to make Massive batch up :)

I like my sauces...don't have prob with them,just wondering for instance JD no7 bbq sauce can't get close to taste.

Maybe your not adding enough JD to ya mix :P sure u not drinking it before putting in? . :lol:

First question, what do you think is not right with your sauces? Texture, flavour, colour?

Second, what sauces are you tying to clone, most of those available in the uk are no comparison to what you can make quite simply at home.

Last question, are you using ketchup as a base or are you going to raw ingredients?

I have tried bodeans smoked hickory sauce and can't make anything like it taste wise and yes I use heinz ketchup

Ingredients for Hickory sauce

Water, Sugar, Tomato Puree, Spirit Vinegar, Chipotle (2.5%), Modified Starch, Natural Hickory Smoke Extract, Onion, Mustard, Cider Vinegar, Salt, Garlic, Acidity Regulator: Acetic Acid, Cracked Black Pepper, Colour: Caramel (E150c), Spices, Spice Extract.

Ok ketchup is a good start because it already has many of the flavour notes.

I've not tried the Bodeans sauce so I can't help lock down a recipe for you :(

The list of ingredients looks pretty standard, if I were to guess and give you some tips, I'd suggest the following.

Start with a cheaper ketchup, I've never found Heinz good for cloning, it's too tomatoey. I do use Heinz in my suce though :D

Mustard, use French's not English mustard

Blend your sugars, use molasses, dark brown, light brown, white all together.

Typical spices used are allspice, cumin, cardamom, cinnamon, different paprikas and chile powders.

Sorry I can't help more with cloning this particular sauce.
