Home made chilli powder
Not sure if this goes here, or even if the vegie wierdo section is ever going to get looked at!
Ironically, I've bought so much meat I've had to 'clean out' my freezer to make room for it all and as a total chilli pepper addict I have hundreds of peppers in the freezer that I've had to use to make room for meat.
When I say 'use', I figured the best way was to make chilli powder and thought i would make a running post on the process, successful or not.
I started chopping and de-seeding. I grow dozens of varieties each year and freeze what I don't use.

For the record amongst this lot include:-
Japaleno
Hungarian Black
Thai Mound
Lemon Drops
Dorset Naga
Cayennes
Scotch Bonnets
Orange Habanaro
Fryers Hat
Rocoto
Aji Crystal
Hungarian Hot Wax
+ a few more I cant remember the name of!

After spending ages getting them ready I finally put them on the smoker!

In total I put four of these 'smoke bombs' on, containing soaked hickory chips.

My wife grows rosemary so for some extra smoke and flavour i threw a few handfuls on.

Maybe i over did it with the rosemary!

I hope my efforts have infused enough smoke into the peppers, the next stage is to dry them out.
My dehydrator has 5 trays, i put the thick skinned peppers on the lower level. This will stay on over night so i'll update in the morning.

The chillies were nice and crispy and ready to crush when I got up this morning

If you ever have a go at this, put the mortar and pestle inside a bag, if your messing about with Naga's and Habanero's the last thing you want is a lung full of dust. (I woke my wife up this morning coughing and sneezing while trying to grind without the bag!)

Nearly done..

I use a chocolate shaker for my powder, the type used for dusting fancy coffee's. It means I need a little extra effort grinding the powder down nice and fine but it has a tight plastic lid to keep it dry.

All done! Thats me sorted out for chilli powder for a long time to come, dam hot too, this stuff makes cayenne powder look like paprika.

What a wonderful idea. My rosemary has long since broken the confines of my herb garden, I have heaps of the stuff. Must try that!

Been useing rosemary wood for smoking for a while...its kinda sweet and gives a lovely smoked flavour.
Those peppers look wonderful. Dorset naga and habs ,,nom nom,,Picked up some bhut jolokia seeds might give then a try next year ...bit late to plant them out now.

looks great, must get me a dehydrator for jerky. if you smoked and dries jalepenos, would it come out anywhere like as good as chipotle?
