Check out http://www.ibcabbq.org/topbar/eve.html - International BBQ Cookers Association
and http://www.lonestarbarbecue.com for cookoffs in the Texas area, The Houston Stockshow and Rodeo BBQ is also
coming up one ,big party. The cookoffs in Texas are more laid back than KCBS, most cooks do use sauce but the big difference is chicken- only one chicken half turned in and there is not a pulled pork category. There is one KCBS event around the first of September near Dallas- BBq and Bluesfest. Good Luck and if you need help, give me a shout.
Thanks, Chuck

Wow, memories ... we cooked at the Houston Livestock Show and Rodeo ... it's a great party, but I'm not sure I would call it a real BBQ contest ... you just cook one category ... Ribs or Brisket if I recall correctly. We won a place as winners of The Jack and we had an absolute ball. The guy from Browns Foreman (Jack Daniels) looked after us really well, and once people found out we had won the Jack and were from England, we got armfulls of wristband invitations to everyone's parties !!
