Beef skirt Carne Asada

Got my beef skirt marinading since last night, really looking forward to trying this out and feeding back to you.

Just out of interest does anyone else use beef skirt for anything?

I use the Wicked Good BBQ Beef rub and marinade on beef skirts and smoke them, I use the marinade as a mop sauce and mop it every 30 minutes until it's cooked, which usually takes 4-5 hours. This is my favourite thing that I cook but it's not cheap, beef skirt usually £9-£10 per KG around here

Costco sell skirt - unsure of the current price though.

Cheers, I did join Costco the other year at a food fair but didn't make it there once as it's 40 miles away, I know my parents have a Costco card so might make it a family day out when they come at christmas to visit :)

I tell you what though, the sandwich was fantastic, I can definitely recommend that people make it

For the marinade I used 1/2 cup water, 1/2 cup veg oil and 1/2 cup of the Wicked Good BBQ beef rub, the missus made a big batch of her special chilli to 'christen' our new big stock pot too :D
