Rolled pork shoulder and meaty ribs defrosting for tomorrow

Made Big Bobs white sauce and a BBQ sauce today from recipes I got off triple D, had to adjust them alot as the originals would cut the throat off ye :lol: . Big Bobs white sauce didn't end up white, but it's darn good though and I had to add beef granules to the BBQ sauce to calm it down a bit.

Looking forward to smoking these meats tomorrow, the ribs should take 4hrs, but how long should I expect the rolled pork shoulder to take so it becomes pulled pork? (its about 1.5-2kg in weight)

Depends on cooking temperature but anywhere from 5-10 hours. Likely to be round about in the middle of those times.

good man Steve. temps will be anywhere between 225-270f. Good to know I'll have to put the rolled shoulder on first :D

Remember with the shoulder you want to time it so you can rest it for a while too. I like to rest mine in a Cambro for 2 hours plus. The ribs are good to eat as soon as they come off the smoker.

No worries Vic. You've got a feast of pork there, hope it turns out well for you. I've got to give my new babies a seasoning burn on Saturday, then I might be tempted to cook something :)

Got it cooked today, rolled pork shoulder on for 7hrs, it pulled nicely apart (not dry).....cheers Steve. Ribs on for 4hrs. :D
