Also £25 for a 9lb pork butt is quite expensive, as it works out to be nearly £6 per kg.

Yep I think your butt pricing is a bit out of sync. You should be able to get Pork shoulder for less than £3.00 per kilo, I know I do, even ASDA is only £2.97KG. Bookers do 10KG boxes for £25 or £26.00
4 Kilos of meat with 25% loss = 3KG. Sarnie with 200gms meat each = 15 x £6.00 = £90 less price of butt @ £12.00 = £78.00
Now take away the price of the buns, slaw, etc etc etc. and I think you would have at least £50 profit so 150 peeps £500 in the bag in principle. One cost to watch for is any pitch/site fees as they can be a kick in the nuts!!!
But as Mr Swine states the money is made at the bigger events, but Its the initial outlay of decent equipment that hampers most and to cater for the large events it isn't cheap!!!

Also need a level 2 and or 3 C & G hygiene cert!!! :D

But surely you wouldn't be using ASDA pork butts to sell? The £25 might be expensive buts it's my local butcher price but still less than online sites then there is delivery

You dont need a hygiene certificate in the uk as it's not the law but you'll need to be registered with the local health authority 28 days before you trade

I would check the hygiene cert rules with wade on here as he is the dogs bollock on info like this
Nowt wrong with a Asda I'm curing the pork loin for bacon at the moment :) most of our pork is coming from Belgium or Germany so it's pretty much of a muchness.
I can get whole pig at 1.50 per kilo you just have to search around
You don't think they use rare breed to cater for shows. Comps yes it's unaffordable to go catering with it
Your butcher is taking the pee unfortunately as a full pair of shoulders is only £2.00 a kilo to him!!! Butchers mark up at 100% so just under £4 is about right if he's on your side
Macro n bookers full fresh shoulders are £3.87 kg so go figure

Booker do bone-in neck end (chilled, not frozen) for £3.39/kg

The frozen collars are £27.99 for a 13.6kg box. I believe this pull quite well. I use it to make sausage.

Sorry mate if you lived local to me then I would have took you.

But I have been in touch with a company down your neck of the woods called Meatmaster Cash & Carry @ The Covered Market in Oxford Tel: 01865 726944 which is 13miles away from you and they do full bone in shoulders for £2.45 per kilo :D

Cheers kiska, I forgot they had one in the centre as well as on the outskirts on botley road. I haven't been able to get myself down there yet weekends or weekdays but I have next week off so will venture down to both! Never been to either before so will be exciting (sad right? Haha)

Just on way back from meat masters and £3.13/KG. got a 4kg shoulder and 2Kg beef ribs. Only thing with the shoulder is I think it has extra bone on so need to trim a lot of fat and some bone off. Will take a pic when home
