Butchers paper?

It seems like there's a lot of brisket cooking going on at the moment which is making my mouth water... So i really wanna I must cook another one soon.

Am wondering if anyone has tried wrapping with butchers paper? I believe it's called kraft paper over here?

Aaron Franklin says you get a better bark from using butchers paper as opposed to foil?

I foiled last weekend with a T & G packer cut after 7 hours in. Took it off at 1.00pm then wrapped in towels in a cool box. At 6.00pm still warm and bark was great! Going to try butchers paper next time

Thanks for the link... yes have seen that episode, that's kinda what's making me think about butchers paper.

Most of the ones i can find are quite thick, around 90gsm but have found this one at 64gsm which might be easier to wrap?

That looks like packaging paper - I don't think that's the same stuff? There's a lot of information about the stuff Franklin uses here - http://burgermary.com/what-is-peach-pap ... explained/ I know you can buy it on Amazon from the original suppliers but I've heard shipping is very pricey.

Looking on other sites it appears that Franklin uses 40lb pink butchers paper but that's 151gsm in the UK seems a bit thick??????

Just had a look at conversions and it seems that the US have different weights for papers for different uses. From his vids it does definately seem thinner than say a std 80-90 gsm sheet of A4 over here so i would prob look at the book stock conversion chart as a rough comparison... 40lb = 59gsm

Works out with shipping about £52 for a roll.

Don't think that's too bad considering a roll is 700 ft (212m) long.

How much do you pay for a good quality roll of foil over here?

Their US sizes an weights are very confusing

Franklin uses untreated butchers paper that's why the fat leaches through. but surely you don't want to import this from the USA??.

Its also know as Kraft paper which is brown try a Google. But you can get white or even green butcher paper

Yes that's basically what i posted the link up to, Kraft paper but since reading the link above that GingerChris posted apparently butchers paper has been treated so it doesn't fall apart when wet.
All i seem to be able to find over here is the std Kraft paper so it may just do that, fall apart?

The only thing i can find here that they call butchers paper has a plastic coating on one side
