Cool (sorry for the pun!), thanks for the hints.

In the end, the brisket was cooked pretty much perfectly, so I have a feeling that my (mild) panic was unnecessary. Once I get more familiar with the kit, and gain confidence, I'll be a happier man.

Will run it on Sunday for a while, without cooking, and experiment with heat readings in various areas, so I understand exactly what I am dealing with. No doubt, I will then throw some burgers in there - seems a shame to waste the pellets. :D

I'll also follow up with Jackies suggestion of a blanket, for when things get colder.

The Traeger will work quite happily in this weather, just cover up the electrics if it is raining

I was going to a board-games session today, so I sliced up the rest of my "too-spicy" brisket amd took it along, serving it cold on white rolls with onion relish. Turns out it might be a bit too spicy for me, but not for others - it went down a treat. Received a number of compliments, and on asking if they thought it was a good idea for me to do it again sometime, I got a very definite "yes" in reply. :D
