Beef skirt

It's a relatively new cut for me but must say I love it - anybody else? 10 mins each side on the bbq. Soft, flavoursome cut. Brilliant for cutting up and using in fajitas. Also had if served with rice or in a stir fry....just doesn't seem v popular at the butcher where I get it

Interesting, one of my favourite cuts for chilli or pulled beef, give it a couple of hours in oak smoke and then chuck it in the slow cooker or the Potje if I am in an outdoor mood, never cooked it hot and fast.

Waitrose were, until recently, selling bavette steaks (posh French word for skirt) very cheap and fantastic as a quick cook steak. Unfortunately it seems that many still prefer the same old three, rump, sirloin and ribeye as they've stopped stocking it now.

Didn't know this was skirt, we enjoyed some last weekend picked up from Waitrose in waterlooville, so they are still about.

The last few occasions I've been in there I couldn't find any so I assumed they'd stopped stocking it. Good to know it's still available.

Skirt's one of my favourites for BBQing when I've got friends over. It's a real crowd pleaser, and grilling a foot-long piece of meat is quite theatrical. Just like to marinate, rest, slice and serve in its juices with cocktail sticks.

Apparently Fletcher's Bar often has a decent amount of skirt.

Morrison's usually does beef skirt.

I find a rub with meat tenderiser about 10 mins before really helps as it can be quite tough.
