Hi there--just wondering about hazel...we have 3 large trees on our boundary that we coppice regularly for firewood. Not yet seeing it on the table...

Also, can the bark be including on the chunks or does that need to be stripped off....

All fruit and nut woods are good to use ... bark usually gives a more bitter flavour so avoid it if you can.

able to get some ash in bulk, what's the flavour like, do you need to put plenty on?

Not used ash for a long time. When I first started smoking I bought a selection of wood, ash was one I didn't buy again so I guess it wasn't one of my favourites.

Seem to remember it being quite light. Still be careful not to load too much on or you'll end up with bitter grub.

It's not so much as a missed wood, but you can use hickory for chicken as well

Has anyone used beech wood chips before? Never used them before. Can anyone let me know how it turned out i.e colour/taste etc

I used beech chips for my turkey at christmas which was really nice, i only used half a cup and it was quite mild so next time I'll go for a whole cup but I did get good colour and a nice bit of a smoke ring on my turkey too.
