And that's forum doing it's job - glad you took heed and stayed away from the offset smoker - I had one, and soon got rid of it!

Chickens are also another quick option to smoke on the weber I reckon - none of that fancy beercan chicken though - just brine it first and you will never do chickens any other way (unless you live in the US deep south)

+1 for the UDS as well though - you can make then look splendid and much sexier than an offset!

Looks like tiny n Essex pretty much nailed it . A thermapen is a good investment also, yeah they seem expensive but they do exactly wot they say on the tin n make checking for temps instant! As for 1st cook I'd do a rack of spares cut st.louis style so ya can impress her indoors with yer skills as a butcher as well as BBQ ;) then obviously get yerself a UDS built
