how much charcoal do use proq/wsm?

how much charcoal do use proq/wsm?

Hi peeps,
I was wondering how much charcoal people with a proq or wsm get through when cooking a pork shoulder or brisket.

You know, a 16 hr job, just a rough guide.

It varies for me on which WSm I use. Typically it is:

47cm WSM -

Cocoshell Briquettes using minion (seldom done) 6-8 Kilo just under 2 4 kilo bags
Restaurant Grade Lump using minion (mostly done) 8-10 kilo or just under 1 12kilo bag

57cm WSM -

Cocoshell Briquettes using minion (seldom done) 8 - 10 Kilo 2.5 4 kilo bags
Restaurant Grade Lump using minion (mostly done) 1 x 12kilo bag.

Generally I use lump and light with briquettes and use the clay saucer method. I tend to average temps for 17-19 hours with those quantities ambient temps make a difference also.

It's been a while since I had an Excel so best to get the views of existing owners.

With the ProQ i find i use about 6kg of lumpwood to cook pork shoulder or brisket.

You'll only need half that for ribs and chicken.

SwindonEd...is that quantity for the whole cook and do you use the minion method?...

If so, what ratio....load up the charcoal basket as much as possible and add a chimney full or little and often???

Yeah that 6kg is for the whole cook, and yes i do use the minion method. I also use a clay saucer instead of water in the water pan.

Normally i'll get 4-5 kg in the basket and i'll top it up when needed, normally 10-12 hours in.

I did miss out that i'll also use half a chimney of briquetts fully lit which i pour over over the top.

when adding more lump i'll add about 6 or 8 handfulls of unlit lump, i always do this through the door rather than taking the stakers off.

this will normally keep it going for another few hours.
