Hi ! Just looking for a few pointers on cooking time, bbq temp and internal temp targets for a cook I'm doing tmw. I'm doing two gammons. I bought two Wiltshire cured unsmoked tesco finest gammons yesterday. I put a simple rub on late last night and will get cooking tmw. I want to give one to a friend and keep another in the fridge for picking at during the run up to Christmas.

Anyone got any good tips for these? How many days is it safe to keep picking at them for sandwiches etc? Could we include on the Christmas Day? Use by dates are 12th jan but since then I have opened them and applied a brown-sugar based rub. (No salt).

I have a weber 57cm kettle, and a smokenator too.

They're cured, so they'll last a week or more once cooked
