Frozen Meat

every time ive used my smoker, ive used fresh meat, however I was in Tesco last night and they had a near 4kg shoulder for £11.50, but the weather forecast isn't looking too good for at least the next week

what could I expect from using a frozen joint, do many of you regularly use meat which has been frozen ?.....is it ok or does it affect it somehow

Harry Soo posted to his facebook page that when he travels for competitions, he freezes his meat before going. I'm assuming that means it is OK!

When we can afford it, we tend to buy the whole shoulder. We then separate it into the butt, picnic, hock and trotters and freeze 3 out of the 4 cuts. This is NOT scientific, but we feel that the frozen meat does apprear more tender at times.

I stock up at a meat mart every now and then and buy loads, and freeze it all, I pull it out 24 hours before cooking time, never had a problem!!!

Does anyone else find chicken goes a bit rubbery (thank you very much) after freezing?
