Shoulder @300F ?

ive heard it mentioned in a few places that you can do a shoulder at 300f, im thinking of giving it a go tomorrow as I don't have time to do it low and im doing some chicken, im just wondering if anyone on here has ever done it and how did it turn out ?

I wont be getting a big one, just whatever the supermarket has, its more of a test really to see what happens, im not expecting it to be as good as a bigger joint done lower but ive seen on some American sites some restaurants doing them a bit faster

I've not tried it myself, I quite enjoy a low n slow cook. But cooking hot is supposed to be just as good in terms of final result, also by cooking hot you drastically shorten or eliminate the stall. I've read of people cooking them at up to 350f, so pick a temp and see how it turns out. Best of luck to you.

Done it quite a few times myself, 350 F, as expected it speeds up the cooking time considerably without drying out the meat. I may not go back to doing them at low temperatures, Turbo Butts only for me now 8-)

I enjoy the slow cooks too but the ones where the temp control fails and I end up killing the pork at 290F for a time trying to smother the fire it turns out more moist.

well it went on at 12:15pm, injected it last night with some apple juice and a bit of the rub mixed in, rubbed it about 15mins before it went on, smoker is currently at about 300f with all vents open, ive not filled the water pan, instead put a clay saucer wrapped in foil in it

12:15pm - Meat In
1:15pm - 109F
2:15pm - 153F
3:15pm - 187F

wonder what ill end up with, hope its not dry as a bone

just took it off at 203f and wrapped it in foil, so 4 hours total cook time hmmmmmmm

seemed really moist tbh but ill find out in a bit, just put some chicken on

Jesus its amazing, never thought this was possible, BTW the whole cook was pretty much at 350f

Joint was 2.78kg then I took the fat off so around 2.5kg
