I find that Weber Premium are far better than others I have tried for sustained cooking. But if just doing steaks they are going to only be on for a short time so I tend to use lumpwood charcoal or even hardwood burned down and cook for a few minutes each side (depending on thickness) and then rest for 5 to 10 (dependng on thickness).
