Store bought Sauces and Rubs

I know you professional guys make your own, but are there any Shop bought sauces and rubs that you would recommend?

I cook on a small scale and its often not suitable to be making my own sauces.

Stubbs have a great range.

Although homemade sauces last several weeks, even months in some cases. If you found a nice simple and basic method online, it would not take long and can be quite cost effective. It's fun too. They tend to only make a few cups each time.

You just need to decide if you want sweet or more vinegar based sauces. They tend to differ by regions.

There aren't that many good bbq sauces around in the UK IMHO. I find I end up jazzing the store bought ones up, os I might as well mak my own. I've got a recipe for a clone of the American KFC honey BBQ sauce that's delicious, can be made in very small batches and only takes about half hour to cook up. If you want it let me know.

If you can find Cattlemen's sauce in the UK it's ok. Newman's sticky glaze is also pretty nice for glazing chicken, ribs and pork.

Rubs are a nightmare over here. I ship my competition rubs in from the US and make my own for eating at home, again these are quick to make and can be made in small quantities so it might be worth exploring the homemade option. If not, try eBay for shipping them in from the states, rubs like KC Masterpiece are cheap enough to buy.

Ok this recipe can be scaled up or down, the example here makes about 2 cups.

Ingredients:
1 1/4 cups ketchup
1/3 cup cider vinegar
1/4 cup molasses sugar
2 tsp onion powder
1/2 cup honey
1/2 tsp salt
1/4 tsp chilli powder (optional or add more depending on the heat you want)
2 tsp liquid smoke (optional but recommended)

combine all the ingredients in a non-reactive pan, bring up to heat and simmer for about 20 minutes or until you get the colour and thickness you desire.

Job done.

This is quite a thick sauce just like bottled BBQ sauces, when using it for glazing I'd recommend cutting it with apple juice or beer as you would with a store bought sauce.

It'll keep in a sealed container the fridge for well over a month.

the only BBQ sauce ive liked over here is Ballardo brothers, but its difficult to find, as forrubs, I always make my own, dead easy (although when im lazy I will use a Nomu one)

have fun creating your own (tends to be the wow factor for the sausage burners that come to your parties as well)
