After the perfect wings

Im trying to find the best way to do wings (I love the little suckers), so decided to try two methods, both smoked, then one set crisped up with the water pan out and one deep fried in the Southern USA way.

Anyhow, 16 wings, cut into halves at the joint, one set rubbed with magic dust the second set rubbed with wild willys rub (I prefered the magic dust in the end, a little more kick for me)

Smoked over jack daniels chips for hours, i then deep fried the wild willys set for 1 min and applied a wing sauce from the shop,

as for the magic dust set, i took the pan out to increase the pro q's temp, and left them on for 30 mins to get the skins crisp, they were awesome, finally I sauced them with a home made chipolette and apple bbq sauce.

Overall I actually prefered the non fried ones not just because they are that bit healthy, but also because they tasted less greesy, photo's below

Its funny i was chating to one of the teams who had some wings on the go (Thanks Cuan!!) this weekend at the comp, I love them but have found myself actually wanting more and more kick each time......... is there a limit or am I going to blow my head off one day, can anyone let us know which hot sauce they use or do you make it?

Easy Hot wing sauce recipe .... Butter and American pepper sauce ... not tabasco as this is too raw ... the more pepper sauce, the hotter it is!! Just need someone to get me some from America .... now who do I know who's going out there soon ... :)

On Diners, Drive Ins and Dives on Food Network last night I saw a BBQ special and they visited a Diner that did BBQ chicken wings. They rubbed and smoked them and then fried for 1 min to order and then sauced as required. Looked delicious. They described them as a smokey infused flavour but with an awesome crunch. Hope it helps :P
