Going to cook a pork belly tonight on the Weber.

Just wanting to know is it essential to put the meat in boiling water and how long for?

Due to time, I just did it.
Its been in the Weber now for about 1hr and it is looking ok and smelling better.
Had some troubles with the coals going out on one side, but I topped them up from the chimney a little while ago.
Handy hint - Wear more than just socks when using a chimney a coals do get dislodged and stepping on them is rather painful.

 excellent, we have all done it! Bookers do a great heat glove for £5 if you have one near you.

To Blanche or not to blanche - I did and it tasted great, thankfully it was not a large piece of meat or I would have had to leave it on there until 2200.
Some garlic rice and Spring cabbage on the side and I had a great dinner..
