Idiots guide ?

Postby fatbloke » 01 Oct 2011, 10:30

Does anyone have links to an "idiots guide" ? As I'm just starting out, having obtained a small Brinkman smoker/grill - initially for smoking, but moving up to "proper" BBQing.

I have no idea which would be the most straight forward (take that as "sensible starter recipe"). I'll eat pretty much any meat, with no particular preference.

I do prefer charcoal burners (which is what I've gone for), as I'm not a believer in "fake smoke" flavourings.

I'm happy to read up on things first, but can be a bit impatient.......

So any guidance/idea's/suggestions etc would be very welcome.

Try Amazing Ribs, Meathead, a.k.a Craig Goldwyn's website is a really good resource for both those new and old to BBQ, I've put a few of my favourite pages below

Tips Page

Bullet Smoker Set-up Guide

Ribs - Best Ribs Ever (According to Meathead)

Pork Butt (aka shoulder)

The Stall, key to understanding this so you don't start cranking the heat up when cooking slows down

Pork Cuts - Useful to get the right thing from your local butcher especially as most terms used in BBQ are American

Take your time on the site, there are loads of links on every page, most contain little gems of information that can easily be missed

Have fun! Justin

meatheads site is awesome.

depending on where you go with low and slow the virtual weber bullet is a pretty good site too, however if you do go there i will bet my dinner that you buy a wsm within a week!

there's loads of stuff on youtube too, so for example if you want to do a beer can chicken, just search and there are loads of 'walkthrough' vids.

welcome to the bark side my friend!

If you are wanting to smoke things like Chipotle (carried from other thread) you may want to also invest in a cold smoke generator (~£35) to sit in the bottom of your Brinkmann as this will give you added flexibility for both hot and cold smoking.
I have a birthday coming up very soon and am hoping for a nice new shiny WSM to be waiting for me when I get home. I would have bought it a month or so ago but was given very strong hints that I should wait until I get back from the USA ;).
