Internal Temperature Chart

The internal temperatures shown below are those recommended by the USDA

Beef
155 F

Pork
160 F for medium
170 F for well done

Veal
160 F for medium
170 F for well done

Lamb
160 F for medium
170 F for well done

Chicken
180 F juices should run clear when skin is pierced with a fork

Turkey
180 F Juices should run clear when skin is pierced with a fork
Turkey Breasts may be safely cooked to an internal temp of 170 F
