Even cooking a rib rack?

Even cooking a rib rack?

I threw two racks of ribs on the smoker yesterday, without a doubt my best yet but i was wondering about even cooking. I put them on for about 1 hour 30, then wrapped then in foil for a further 2 hours.

The smaller half of the ribs were fantastic and falling off the bone, the larger end were a little more chewy.
Can i just leave the rack on longer to make them all tender or would that ruin/dry out the smaller end of the rack?

Hi Ady,

I only use racks when I need capacity. i tend to cook them bone side down and flat.
