Only hae time at the minute to watch part one of the first video, cheers it took me back 35 years or so, great to see a butcher who is involved so much with his supplier.
Idiot question (No.1 one of doubtless a series) when he was breaking down the fore-end and talking about the chuck (5.50 in) that small rack of ribs are they the short ribs? I said it was an idiots question :D

i haven't fully watched the butchery film yet. there are 2 films on this link from the excellent blog ''sky full of bacon''. Most things they write or film are worth a view.

Always loved aquarium smokers, a real draw, but far too much hassle to manage them :lol:

There isnt any reason why it couldnt be adapted, it would look brilliant front of house.
