Salt Lick BBQ sauce is great. Available from Whole Foods.

Most of you will probably know this already. I've done various racks of ribs on the Pro Q. I noticed that some of them had gone a bit sinewy. The texture had gone dry.

I've realised that by putting the rub on over night the meat begins to cure and goes a bit like bacon.

The lesson I've learnt is ...

I paid $9.99 for a tub of rub in Bandera Texas. Food is expensive in the US. I bought one of these in TK too. It's a bigger tub than the US one and cheaper. These are a pretty good buy. They also have BBQ sauce from the same brand.

My interest in low and slow bbq came about from a recent roadtrip to Texas. Here is my full report on my dining whilst there.

First up was a steak at Texas Roadhouse, a chain restaurant with 300 across the USA. Great value. Not a big fan of chains ...
