Man I've just done my first set of beef ribs, had them in for 8 hours struggled with temp all the time. Got them out and they're really fatty and a complete waste really disappointed :evil: :evil:
It sounds like your temperature issues meant the fat didn't render down through the cooking process ...

Pork ribs or beef short ribs are a good place to start. Also consider chicken wings and as mentioned already, pork shoulder for pulled pork. Don't forget to get a temperature probe or thermometer as it's the best way to tell when pork shoulder is ready to pull.

Depending on what you're smoking you may want to look at getting a thermometer or temperature probe as this makes telling when the food is cooked far easier for you.

I got a Tom Hixson order last week, with St Louis Ribs in it and mine came in a long thin package with two racks of ribs laid one on top of the other. It looks nothing like the pics posted in this thread :o :lol:
