Last Christmas I cooked a pork shoulder and everyone loved it. It was my first christmas dinner on the smoker, and all went well. Have a practise and then go for it.
Project Smoke by Steve Raichlen is a good read. He covers smoking all sorts of stuff, so may be worth a look.

I had a similar issue with my gas. It must have had a slow leak, and even with different bottles.
In the end I just detached the attachment after every us. Not a problem now as a very rarely use it. Good luck.

It has specific meat settings, but also can set the temperature that I want.

Just a thought, putting briquettes on burning coals can create smoke. Try getting the briquettes going in a chimney starter then adding them.
