Advice for timings this weekend please

Hi guys am doing a bbq on Sunday for the wifes birthday. I have ordered a full brisket, a pork shoulder and 2 racks of ribs. I will be using my PBC, question is do i put it all on at the same time and take off and wrap as each get to temp and store in cool box wrapped with towels or stagger start ...

Thanks for the welcome guys, have used it over the weekend to do a pork shoulder,ribs chicken breast and a 3lb link of good old cumberland sausage. amazing so far :D
