I could not recommend Turner and George highly enough. The briskets are amazing and if you talk to them nicely they sometimes have some 51 day aged briskets and they will do them for the same price as the 28 day aged. They melt like butter in your mouth and have an amazing fat layer on them and ...

I usually do a brisket in 12 hours. In your case I would start the day before with an injection of high quality beef stock and some rub if your using and inject about ever 1 inch or so then wrap in cling film and chill over night. The Maverick is a great for the BBQ and the meat on the grill but I would also recommend a Thermapen. This is a great for testing the meat quick and fast. They cost a bit but worth the money.
