Dawsons Department Store at Clitheroe (aka BBQWorld.co.uk) have them in for £5.94 a bag as do WOWBBQ.co.uk. Minimum orders needed to get free delivery though.

The Mavericks were around £45 on amazon but the prices seem to have leapt up.

I'd get the pork butt out the way first, wrap it and put it in a cooler box/bag with towels to keep warm. Then crank up the heat and put the chickens on and leave the sausages until last when you can remove the water pan ...

With big hunks like pork shoulder and brisket I let the resting bring it up to temp but I found taking the ribs up to 203/205f definitely makes them more tender.

I did try separating the ribs as I'd seen this advise and figured it would give more rub and smoke flavour but it didn't add much and I ...

I have smoked beef short ribs a few times now, mainly because it's a cheaper cut of beef that gives great results.

I did find that taking the temp up to 205f internal made a big difference to how tender it came out compared with a tougher finish at 195f. (Cooked between 225 and 250f ...

The flamers are natural, just wood shavings soaked in a wax. Then the flame produced is what ignites the coal so no direct contact. This is no different to burning paper or hydrocarbon gases etc such as camping stoves.

Tried those flamers and they are awesome. Just need one under the chimney and everything is going really quickly with hardly any smoke or smell.

Waitrose currently have 3Kg boxes of the oxford company lumpwood charcoal for £3.99. I got 4 boxes :D
