Just to follow up.....
I ended up trying a Pork Butt with indirect on Weber Kettle; it was a shoulder blade (6lb) to be more precise. Temp control was difficult to keep below 250.... It fluctuated between 240-280 but worked out okay, was a forgiving piece of meat. I was please with first results ...

I've bought ribs a couple of times from some decent butchers now. The ribs always come as a rack but they have the tendons (sorry if this is the wrong terminology) attached to the ribs bones. Do you normally trim the part with the tendons in or do you just cook it with them? There's quite a lot of ...
