Just to follow up.....

I ended up trying a Pork Butt with indirect on Weber Kettle; it was a shoulder blade (6lb) to be more precise. Temp control was difficult to keep below 250.... It fluctuated between 240-280 but worked out okay, was a forgiving piece of meat. I was please with first results ...

I've bought ribs a couple of times from some decent butchers now. The ribs always come as a rack but they have the tendons (sorry if this is the wrong terminology) attached to the ribs bones. zippy, in one sense I feel relieved its not just me then .... I sometimes feel I am constantly being tested from up above.
