That happens occasionally when left in the wrapping, nothing to worry about, definitely don't throw it in the bin!

I've just pointed this out, however I've been told i'm now sleeping in the shed. The shed has a stocked beer fridge, WiFi, a rather nice sofa bed and a dart board, with the smoker right outside. I'm considering sending out change of address cards to friends and family.

I've found that even a fairly high end sous vide doesn't recreate the taste and texture, although it's a much better option than a microwave. Simplest thing to do would be to invite more people over, a man with barbecue and beer is always popular!

One brisket generally feeds about 15 depending on your cutting skills, which isn't too bad price wise. I've tried cutting briskets down before and found that they don't cook as well. Brisket fajitas the next day are a winner as well for leftovers!

Tom Hixson had 15% off their USDA brisket when I last ordered from them, it definitely has a greater depth of flavour than British or the Australian.

Well I guess staying up all night is a young man's game, maybe in a few years I'll look at a pellet smoker...!
I got some USDA briskets from Tom Hixson, point was big, incredible flavour, which I rarely find in English briskets, something to do with finishing cattle off on grain I'd guess.
