Oddly enough I did a leg of pork in the UDS last night. 200f overnight having injected it with some of my barley wine and a Cajun-ish rub.

Good morning all!
I've just found this forum so thought I'd register and join in the conversations.
I'm new to smoking having built my wife a UDS out of one of the drums we get our cider apple juice supplied in.
First smoke is planned for the weekend!

Has anyone heard of a tropical hardwood called Tambalun? I own a brewery and the hard spiles that are used to re-seal the casks are made of this wood and I was wondering it it's be suitable for smoking?
