My usual pork smoking goes as follows:
1. Fire up the smoker.
2. Rub the meat while the smoker gets warmed up.
3. Add the meat to the grill, with a probe thermometer.
4. When the meat gets to about 75°C internal (or when it seems to have stopped climbing) foil it.

If you have the Tesco one I am very surprised as both the home base & b&q cheapies do.

Thats good advice, ive also drilled some holes in the fire pan as I saw advised, I need to look in to sealing it up next

It is the same smoker as yours whuch I have bought but when I fired it up with the (saved) pork shoulder skin and fat I couldn't get any heat out of it. I could touch the lid and the top section without real discomfort, and the temp guage never got much past 70'c.

Others, perhaps, this one has been fine for me. I've used them, very good briqs that burn for a decent time (240 minutes is probably pushing it) and keep temps stable.

Nice job. I was going to build a small roof to protect my smoker, but the wood was going to cost more than the BBQ equipment! Settled on putting it in the shed to keep it dry.
