So we have done H&F methods for about 3yrs and it was only at the end of this that I figured out what I was doing, which ironically has improved my L&S as well. I appreciate Keith's comments based on a judging perspective, but I think that has more to do with the competitors and the cuts of meat ...

A number of obvious things he did that shows he doesnt know what he is doing

- There seems to be hardly any charcoal in the pit
- He puts the water pan on top of the charcoal (clearly never used a wsm)
- He started mopping within seconds of putting it on.

H-Mart is located close to me and they have Irish and UK brisket for abotu £5.4/kg. The one area that I get great value is that they do beef Jacobs ladder ribs. Normally they freeze them then slice it thinly, but the quality is excellent. They do pork belly's as well so I can normal knick an ...

Lit it with 1/2 a chimney of charcoal at 8am this morning. Its been rock solid at this temp all day.

Having used a cast grate on the OTP, its a great piece of kit. However it does rust but that's easily handled by a spray of oil. However this approach wont work on the kj as the oil will seep into the inner shell. So my question is how do you deal with the rust problem. Its something I am ...

Love my KJ that I have had for about a year. I always wanted a BGE and tried to import one from usa about 10yrs ago but it was prohibitively expensive. Eventually settled on a black KJ. So so happy
