I've been in contact with a UK company that currently makes a stacker for a Weber 57cm One Touch to turn it into a smoker. It looks very well made and sturdy. They may be willing to make a 47cm one to increase capacity of a WSM 47. Could you let me know if you'd be interested?! :o

If you don't mind briquettes; Lidl £4 when you buy 2x5kg bags. I've been using these for years and never had any issue with the quality, just as good as any of products found on sale and widely available. At that price I don't worry if I use too much either.

Do you think the membrane causes the ribs to behave differently to the heat? In other words, will the membrane tense up under the application of heat differently to a rack without? If it causes the ribs to squeeze that could make the meat fibres come closer together making flavour harder to ...

A new ios app is being tested at the moment which connects to your home network so hopefully that should be released soon. If you get stuck for ideas try some of the recipes in the manual they work.

So with a little bit of technical stuff in the background one could monitor their Daniel Boone ...

We have a few farmers around here in Hampshire. I can highly recommend Bowtell Farm Shop in East Tisted. Easy to find on Google. I have used others too. It's worth calling in and talking to the farmer. The quality of the meat is unlike any supermarket meat ...

Chrig, If you're winging it then the photo evidence certainly suggests otherwise. There are far too many ways to needlessly over complicate the simple process of cooking a great piece of meat at a lower temperature. It seems that you've nailed it!
