Re: This little piggy went to market......
If you are going to use the head etc for brawn/scrapple may I suggest removing the cheeks first, also known as Bath Chaps, they braise/slow cook sublimely, serve with a slow cooked red cabbage and apple mix. Absolutely a delight on a cold winter's night with fresh bread and a good cider.
Good luck ...

This little piggy went to market......
My Gloucester Old Spot goes off to the abbatoir tomorrow.
It's been a happy time watching him grow, scratching his ears and feeding him apples, but his time has come. He has piled the weight on in the last 6 weeks so I'm hoping he has a good layer of fat.

Re: Who#s making the most of the sunny October weather?
Pork butt, ribs and chicken for me.
Chicken was superb (the Traeger makes the most fantastic chicken), ribs were great (had some 'Whoop Ass' sauce on and were nice and hot), butt was very dissapointing.
I had bought half a pig from what I hoped was a new supplier - direct from the farm in deepest ...

Re: Traeger Lil Tex - Pellet Cooker
Well you can't fault the service from Liverpool Pellets - ordered six bags of the Lil Devils yesterday at 3.30, just been delivered. The Carrier sent a txt giving a delivery window of 1 hour and they were bang on.
Going to give the pellets a go the weekend and see how they perform.

Re: Big Ron's rubs
Taking it back on topic, Big Ron's Rubs seem to be popular over on the Smoke Ring, but I've not seen them over here.
If you know of a Supplier, I'd be interested to give them a go.

Re: Traeger Lil Tex - Pellet Cooker
Thanks for that. The price does seem very persuasive so I'll give them a go.
I do have a bag of Jackies pellets left, so I think I'll keep them and use as you suggest for the initial smoke.

How are you getting on with the Lil Devils?
I need to place an order soon and wondered what your latest view was.
Thanks

Another foiler here....but then I foil line everything I use to cook with indoors or out

Are you keeping her yourself or is she being raised on the farm for you and handed over after slaughter?
She is being raised on a nearby farm. I get visitation rights
I'll collect her from the abbatoir.
