I went for the us thermometer mentioned earlier from an eBay seller. Took a little time to arrive and I got stung with customs but it is a very handy remote thermo. I was surprised at how far out the lid thermo was particularly at the higher temp.

Thanks for the reply. I took the plunge and slow cooked the joint at 215f for 5 scary hours and was relieved to find a nice juicy medium rare towards medium beef with a decent pink smoke ring. it surprised those that ate it anyway.

Just loving this smoker!

Advice for cooking topside of beef

Seems like we picked up the wrong cut of beef !
Does anyone have advice for smoking a joint of topside?
Roulghly how long does it take and what is the view on temperature etc

Hi,
Brand new to smokin but wanted to say a big thank you to Toby for his help and patience this week in equipping me with an Excel for the weekend.
Done a couple of dummy burns just to get a feel for it and give the smoker a little seasoning. Just lovin the smell in the garden so can't wait to ...
